Harry Masters Jersey is single varietal - aromatic notes of yellow plums, fresh apricots and a hint of caramel, it is full bodied and finishes with a slatey, mineral note. Barrel fermented with wild yeasts & finished with light carbonation, it is a true reflection of the varietal.
Harry Masters Jersey is originally from Somerset, UK from the late 1800s. The name comes from the man who discovered it, Harry Masters, who was the miller at Yarlington. The 'Jersey' refers to the apple shape, which can look like a heart with its large shoulders and slender end. The cider pairs deliciously with a sharp cheddar (the village of Cheddar is about 25miles from Yarlington!). This cider apple is annoying to grow (we lost 15 trees this year to snapping graft unions), a pain to press (yield is less than half of other varieties) and needs some ageing to really bring out the flavours.
