The Harrison apples bring a higher acidity with soft, leathery texture with their light bodied tannin profile. It is fermented with wild yeasts to bring added complexity. The variety is known for notes of citrus, ranging from orange, marmalade & orange peel & this one does not disappoint. If I had to compare it to a wine equivalent, it is almost like a skin contact white wine - lots of texture, but nice elements of fruit and a bubbly finish.
Harrison is one of the few true North American cider apples and was documented as early as 1808 in NJ/NY. The variety was thought lost post Prohibition until rediscovered in the 1970s with a single tree (the week before it was due to be cut down!).
