Referred to by the winemaker as freshly squeezed cherry juice. ‘Sassolini’ basically means ‘little Sassi‘, which describes these younger Cilieglio vines well. Macerated for 5 days on the skins, aged in fibreglass and bottled by hand. Have it at room temp or lightly chilled.
