Electrum 2021 - Awarded a Gold Medal, 2024 All Canadian Wine Awards

Made from estate grown chardonnay, this is a white wine made like a red wine
Fruit was de-stemmed and partially crushed with 20% while clusters included in the fermentation vat
25 days of fermentation, maceration with punch downs two and three times a day
At pressing, free run juice and press juice was combined in stainless steel tanks for elevage
15% of the wine was aged in a second fill oak barrel
All of the wine was recombined into a single stainless-steel tank for bottling
Limited sulphur additions
VQA Ontario, 11.9% ABV
